Thai Green Curry




Mummy cooked green curry for dinner tonight hehe. Its been long since daddy and mummy last had green curry.. think the last time they had it was around august?
Ingredients:
Bai Makrut Leave 3g
Coconut milk powder 40g (dissove in 300ml of boiling water)
Green curry paste 30g
Fish sauce (nampla) 10ml
Chicken 250g-cut into chunks
2 Egg plants-cut into chunks
1 packet of shimeji mushroom
1 red and 1 green Pepper-sliced (mummy uses 2 green pepper instead)
Sugar
Directions:
Heat 3 tablespoon of oil and fry the green curry paste till fragrant with low fire
Fry chicken with the paste till cooked
Add in the 'coconut milk' , bai makurt leaves and mix well. let it boil
Add in shimeji mushrooms, Egg plant and green peppers, fish sauce and simmer till ingredients are soft
Add sugar to adjust the spiciness
Serve
