Mummy made me a chocolate bday cake for my bday this year. the cake itself is the same cake tat she made for daddy's bday. a chocolate sponge cake. she just changed the decoration and used a swiss meringue chocolate buttercream instead.

Daddy's bday cake
Recently mummy haven been blogging often as she has been busy researching for a cake and frosting recipe for daddy's bday. Ever since she became a stay at home mum, she finds it meaningless to buy daddy presents as she will be using his $ for his present! so she has been trying to bake him a bday cake every yr.. last yr was oreo cheesecake and this year she wanna challenge something else so she decided to make a chocolate sponge cake with buttercream frosting!
Recipe for chocolate sponge cake
Ingredients:
3 eggs
90 g castor sugar
70g plain flour
20g cocoa powder
15g butter
2 teaspoon milk
1 teaspoon vanilla eccense
Directions:
1. preheat the oven to 150 degree celcius (mummy's oven is rather hot thus she uses 150 for all cakes. u might want to try 170 degrees depending on your oven..)
2. crack the 3 eggs into a mixing bowl and mix with a electric hand mixer with medium speed. Slowly add in the sugar.
3. Increase the speed to high after all the sugar has been incorporated and continue to beat until light and fluffy (this may takes about 10-15mins). you should be able to 'draw' patterns which stays on top of the batter with your whisk (refer to the photos in the slideshow for consistency).
4. melt the butter and milk together in a small heat proof bowl inside the microwave oven or over a double boiler
5. Sift the cocoa powder and flour together
6. Add vanilla eccense and the sifted cocoa powder and flour (bit by bit) into the creamed mixture and fold them in
7. After mixture is well blended, add the butter+ milk and continue folding till well corperated (be careful not to over mix the batter). The batter should be very very light and resembles a chocolate moose
8. Pour the batter into a greased 18cm diameter round baking pan and set to bake for 40mins.
decorate it with buttercream
Chocolate curls
Ingredients:
2 chocolate bar of your choice
Directions:
Let chocolate bar soften a bit at room temperature and 'peel' with a vegetable peeler. depending on your preference of the chocolate curls' length, u can use the length or the width of the chocolate bar
** if the curls break during peeling, chocolate bar is still too hard. let it sit in room temperature for a while more. if chocolate bar starts to melt halfway while 'peeling', put it back into the fridge for a while before continuing with the curls.

Butter Cake
Mummy made this butter cake today. Its yummy! LOL
Ingredients:
125g unsalted butter(softened at room temperature or by microwave oven for few secs)
100g sugar
*beat the above with a mixer till creamy with low speed
2 eggs
*crack the eggs into the creamed mixture one by one/bit by bit and beat till well blended by low speed
100g self rising flour(OR 100g flour, 1 teaspoon baking powder and 1/4 teaspoon salt)
*sift the flour into the creamed mixture bit by bit and fold it in, alternating with 3 tablespoon of milk add 1/2 teaspoon of vanilla eccense
pour the batter into the prepared tin (greased well)
Bake at 150 degree oven for 50mins. (the original recipe mention a 170 degree oven but then mummy tried n the top got burnt but the inside is not cooked thus she lowered the temp...)

Potluck Lunch
Today mummy went to a fren's house at Shibuya for a potluck lunch and she made me some pancakes for breakfast and my lunch. She brought only 1 pc out and i almost cleared all of them during breakfast! So i didnt have much left for my lunch... Poor me.. Stupid mummy should have brought more out for me! This time, she uses the same recipe as before except that she changed a bit of the directions stated here: http://jumpy-ourpreciousprincess.blogspot.com/search/label/Pancakes
For these pancakes below, she actually usses only 1.5 whole egg instead of the 3 egg yolks stated in the above link and she seperate the white and yolk. She mix the beaten egg yolk into the mixture and then whipped up the egg white till soft perks form then fold it into the mixture. This makes the pancakes thicker and softer! Yummy! I love these so much! Actually she made 5 pcs but then daddy took one... he said its yummy as well!

As for the potluck lunch, mummy made some brownies for desert since she is a lousy cook hee. She got her recipe from this site: http://allrecipes.com/Recipe/Quick-and-Easy-Brownies/Detail.aspx
Ingredients
2 cups white sugar
1 cup butter
1/2 cup cocoa powder
1 teaspoon vanilla extract
4 eggs
1 1/2 cups all-purpose flour (mummy uses only 1 cup to make it more fudgy. too much flour will make the browny more cake like so if u prefer a more cake like brownie, u can use 1 1/2 cup of flour as per original recipe)
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup walnut halves (optional-mummy didnt add these)
Directions
Melt the butter or margarine and mix all ingredients in the order given.
Bake at 350 degrees F for 20 to 30 minutes in a 9 x 13 inch(mummy uses a 9X9inch pan) greased pan.
** increased the baking time if you are using a smaller pan as the mixture will be thicker n takes longer time to be baked.
Fresh from the oven!
