Quick and Easy pancakes

Mummy found this recipe online and she tried to make it today for her own breakfast. Boy that was really a breeze! Really fast and easy! Delicious too! Very light, soft and fluffy...See how fluffy it is?? The best part is that she dosent need to whisk the egg white(hard job) to get this result!

Ingredients:
1 ½ cup flour
2 Tbsp sugar
2 tsp baking powder
½ tsp baking soda
½ tsp salt
1 ¼ -1 ½ cups milk
2 eggs

Directions:
Mix together the dry ingredients. Add the eggs and milk to the bowl and combine. The batter does not need to be perfectly smooth.
Preheat a skillet or griddle to medium heat. I use 350 on my griddle. Grease the grill and use a ladle or scoop to pour evenly sized pancakes.

Potluck Lunch

Today mummy went to a fren's house at Shibuya for a potluck lunch and she made me some pancakes for breakfast and my lunch. She brought only 1 pc out and i almost cleared all of them during breakfast! So i didnt have much left for my lunch... Poor me.. Stupid mummy should have brought more out for me! This time, she uses the same recipe as before except that she changed a bit of the directions stated here: http://jumpy-ourpreciousprincess.blogspot.com/search/label/Pancakes

For these pancakes below, she actually usses only 1.5 whole egg instead of the 3 egg yolks stated in the above link and she seperate the white and yolk. She mix the beaten egg yolk into the mixture and then whipped up the egg white till soft perks form then fold it into the mixture. This makes the pancakes thicker and softer! Yummy! I love these so much! Actually she made 5 pcs but then daddy took one... he said its yummy as well!


As for the potluck lunch, mummy made some brownies for desert since she is a lousy cook hee. She got her recipe from this site: http://allrecipes.com/Recipe/Quick-and-Easy-Brownies/Detail.aspx


Ingredients
2 cups white sugar
1 cup butter
1/2 cup cocoa powder
1 teaspoon vanilla extract
4 eggs
1 1/2 cups all-purpose flour (mummy uses only 1 cup to make it more fudgy. too much flour will make the browny more cake like so if u prefer a more cake like brownie, u can use 1 1/2 cup of flour as per original recipe)
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup walnut halves (optional-mummy didnt add these)

Directions
Melt the butter or margarine and mix all ingredients in the order given.
Bake at 350 degrees F for 20 to 30 minutes in a 9 x 13 inch(mummy uses a 9X9inch pan) greased pan.
** increased the baking time if you are using a smaller pan as the mixture will be thicker n takes longer time to be baked.

Mummy gave daddy some and he says its YUMMY! its so rare for daddy to praise mummy's food haha. he is always criticising her food saying that they are not meant for human haha.

Oatmeal applesauce pancakes

Ingredients:
(makes about 7-8 pancakes)

1 cup whole wheat flour
2 tablespoon baking powder
1/2 cup baby barley cereal (or other baby cereal-mummy omitted this)
1 cup formula (or another liquid such as milk)
1/2 cup mashed banana (or fruit of your choice-mummy uses apple puree)
1 tbsp melted margarine or butter (unsalted type-mummy omit this)
3 egg yolks
1/2 cup baby oatmeal (mummy uses normal grind up organic rolled oats)
apple juice (about 1/2 cup) Use water if you prefer

Add cinnamon, nutmeg, wheat germ, dash of vanilla or other flavorings if you wish.

Directions:Mix all ingredients together and add enough juice to make pancake consistency. Cook on cook top in frying pan as with "regular" pancakes. **Freezes Well**



Verdict: Jumpy LOVES this!
