Gapao-Thai style fried minced chicken with basil leave


Today mummy made Gapao for lunch and daddy says its yummy! Its her 2nd try though. the first time, it was simply too spicy so she decided to reduce the chilli padi's amt this time round..

Mummy found some recipe online and she modified them a bit. also, as mummy and daddy are big eaters, she double the recipe she found online and make a 4 ppl's portion. It should be enough for 2 meals hehe. Its easy since a cooking idiot like mummy can make it. hehe.

Ingredient:
Minced chicken 400g
Basil leave - 1 box of about 10-12pcs
1/2 Onion-diced
2 small pcs of garlic-diced
2 slices of ginger-diced
1 chilli padi-sliced
4 Green Peppers-sliced
a pinch of salt and pepper
a pinch of sugar
1 tablespoon of 豆瓣酱
4 tablespoon of nampla(fish sauce)
2 tablespoon of oyster sauce

Directions:
1. Heat oil, fry the chilli padi, ginger and garlic in low heat till fragrant.
2. Add in diced onion and fry in low heat till they becomes translucent.
3. Add in minced chicken and fry in high heat till they are cooked.
4. Add in the diced green peppers, some salt and pepper to taste.
5. Add in the seasonings(nampla, 豆瓣酱,oyster sauce and sugar) and continue to fry for a while and lastly, mix in the basil leave.
6. Fry the eggs in a seperate frying pan and serve the egg, minced meat and cooked rice in a plate.
